Chorizo Breakfast Skillet

Ingredients:
1 cup chorizo
2 fine chopped potato
1 fine chopped yellow onion
2 chopped green onion
4 farm fresh eggs
1/8 cup fresh grated parmesan cheese
2 tlbs extra virgin olive oil

In a large iron skillet place olive oil and on medium heat sautee the onion and potato until potato is tender and cooked. Add chorizo and cook til done. Make pockets in the hash for eggs to be placed. Add eggs and cover til white is barely cooked on top and yellow is still runny. Top with cheese and green onion. Serves 4
